With the closures of Quay, Oncore and Bentley in 2026, there was hushed worry in hospitality circles that LuMi would be next. Not so. In spite of (or perhaps because of) those fine-diners calling it a day, Federico Zanellato’s Japanese-Italian flagship has been packed with guests still keen on a tasting menu where luxury, innovation and steely-eyed technique combine.
The opening volley of tightly composed snacks is almost disorientating. Bang! A tartlet of raw scampi and whipped foie gras underlined by pickled white strawberries. Snap! Short-spine sea urchin topping a gunkan sushi roll with the surprise of creamy stracciatella. Boom! Oscietra caviar on wagyu tartare.
But then you settle in, cared for by staff with unwavering flow, and take the time to wonder, “How do they get such a delicate texture on the toothfish glazed with sake lees butter surrounded by oyster foam over poached spanner crab and pickled turnips?” Sydney has waterside restaurants with more sweeping views, but none of them sparkle like this.
Good to know: Zanellato sends out the most epically flavoured and layered snacks in town, so go all the way and book the longer omakase menu.
